A small collection of high quality, sharp knives is better than a kitchen full of dull, second-rate ones. You'll end up with knives you won't use. You really only need a good chef's knive, pairing knife, serated knife and maybe a bread knife. You'll also save money by assembling a smaller set yourself and then seeing what you need.
Gordon Ramsey uses Henckles brand knives. Moving away from the German-style knives we have things like Miyabi and Shun with some good performers, but not cheaply. Victorinox is about as good as you're going to get for budget and quality.
