Nakiri bocho are used for cutting vegetables, while a santoku bocho knife is more multi-purpose and used for vegetables, fish, and meat. For a nakiri, get one with a flat blade, not a rounded one. Any Japanese nakiri knife over $50 is typically pretty great and will last a long time.
